I know it sound cruel, but this the only way he is ever going to try anything else.

Take away all of the food that he enjoys early in the morning and just leave the fruits and vegetables that you want him to try. Sooner or later he is going to have to try it if he wants to eat something.
Before you go to bed, give him back his food that he normally likes if he have not eaten anything all day.

This method does work as I tried with my own parakeets.

This isn’t unusual. Many birds are cautious (yes, even afraid) of new foods or other items introduced into their environment. Keep trying w different things and maybe a different way to serve it. Instead of in a cup hooked to the bars try the bottom of the cage. Instead of chopping it fine leave a larger piece. Items can usually be left for longer that 2 hours, leave all day long even when you aren’t home & you may notice some nibbles when you get back. Don’t hover around the cage acting anxious—your pet will pick up on this. Bon app├ętit to you both.
